A Hearty and Healthy Omelette Recipe

Judy Lewis shares another one of her top Kosher recipes.

Whether you're looking for a hearty, healthy breakfast to start your day or need a quick, protein-packed dinner, this omelette does the trick. In order to get this recipe right, you are going to need the following ingredients.2 eggs lightly beaten2 pieces of lox (optional)1 slice of onion1 large mushroom sliced1 mini pepper diced (red, orange or yellow) (optional)PamCoat a small frying pan with Pam, and place the onions, mushrooms and peppers inside. Stir until lightly browned and then remove from the pan.Coat the pan again with Pam for the egg mixture. Make sure that the egg covers the bottom of the pan. When one side is browned, turn over very carefully.Place the onions, mushrooms and peppers on one side of the omelette, topping it with the lox (optional). Fold one half of the omelette over to make an envelope. Serve with a roll, toast or a bagel – salt and pepper to taste. Any cheese is optional. A salad would be a plus to this delicious dish.Takes approximately 15 minutes Serves 1 – double the ingredients for 2
