A Quick and Delicious Kosher Chicken Dish

Got 30-minutes? Whip up this tasty Kosher entree from our new food columnist, Judy Lewis, a grandma with decades of experience in the kitchen.

This is one of my husband's favorite dinners. I hope you enjoy it as well. It is very easy to make and it takes approximately 30 minutes.

Broiled Chicken Breasts with Mashed Potatoes, Fried Onions and Asparagus

Ingredients

2 chicken breasts approx. 4"x2"- approx. 10 oz. (kosher of course)
1 tablespoon sweet honey barbeque sauce
Powdered garlic
Oregano
3 medium Yukon Gold potatoes
1 medium onion, finely chopped
8 stalks fresh asparagus – cut 1" off base of stalk

If the chicken breasts are too thick, slice them sideways to open.
Arrange the chicken breasts on a pan.
Sprinkle a small amount of powdered garlic on it. If you like a lot of garlic, do both sides.
Spread 1 tablespoon sweet honey barbeque sauce, covering the chicken on both sides.
Then sprinkle a small amount of Oregano on the chicken on one side.

Place the chicken under the broiler and turn as it gets a little brown.
When it looks done, remove it from the broiler.

Slice the Yukon potatoes and boil them in a small pan, until tender. Mash them with a little margarine, salt and a sprinkle of garlic if desired.

Coat a fry pan with Pam cooking spray and fry the onions. Top the mashed potatoes with the fried onions.
Boil or steam the 8 asparagus.

Serve with a salad: sliced tomatoes, Romaine lettuce, sliced mushrooms, scallions. Add chopped peppers to taste.

Serve the chicken with mashed potatoes, fried onions and asparagus.
Serves two.

Homemade Salad Dressing

2 tablespoons of Hellman's Mayonnaise
One teaspoon Heinz Ketchup
A dash of garlic powder
A squeeze of lemon juice
Mix together and serve on the side of the salad
