A Sweet Way to Make Shrimp Dumplings
Make a great meal that's both delicious and easy on the stomach.
I'm starting the “5-Small-Meals-Per-Day” diet!
I had five of the below dumplings by themselves as one meal, but you may also have them with a small salad or Udon noodles. This meal did not upset my stomach, but I've been told finding a diet that does not result in a “flare-up” is different for everyone. I hope you enjoy this!
Nutritional advice: rice paper — rice helps as binder in your system without being too heavy to digest.
Sweet Shrimp Dumplings
(1 serving = 5 dumplings)
Ingredients:

- 5 frozen shrimp (de-veined & shelled)
- 2–3 tablespoons coconut oil
- 2 tablespoons small diced apple (red delicious)
- 3 tablespoons small diced red pepper
- 1 tablespoon small diced red onion
- ½ teaspoon grated fresh ginger
- ½ cup shredded carrots
- 5 rice paper sheets
Procedure:
- Set shrimp in warm water until soft and rough chop.
- Heat small sauté pan on medium-high heat.
- In small sauté pan, add coconut oil.
- When oil is melted, add peppers and apples — sauté for 5-10 minutes.
- When peppers and apples are soft, reduce heat to medium-low heat.
- Add onion and ginger – sauté for 7-10 minutes.
- Add carrots and shrimp and turn off heat. Let sit for 4-5 minutes.
- In a small sauce pot add about 2 cups of cold water – bring to a simmer.
- Transfer shrimp mix to small bowl.
- Carefully dip the rice paper in hot water (use rubber tongs if it is too hot for your hands!)
- Place softened rice paper on small dish.
- Spoon 1-2 teaspoons of mix in middle of paper and fold!
- Repeat until mix is finished.
- Let dumplings set for 5 minutes and enjoy!
